Rise and shine, it’s pumpkin pancake time!
These whole wheat pumpkin pancakes are a new addition to my breakfast game. Fun fact, the first blog post I ever wrote was a quinoa pumpkin pancake recipe. Truly, this shows my love for pancakes and all the pumpkin-themed food that comes along with fall.
These pumpkin pancakes are a one-bowl recipe that you can whip up for breakfast 5 minutes!
You will need:
whole wheat flour
milk of choice
pumpkin pie spice
baking powder + baking soda
Whole Wheat Pumpkin Pancakes (serves 2)
- 1 cup whole wheat flour
- 2 tbsp coconut sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp pumpkin pie spice
- 1 cup milk of choice
- 2 tbsp pumpkin purée
- In a bowl, combine whole wheat flour, coconut sugar, baking powder, baking soda and pumpkin pie spice. Mix.
- Add milk and pumpkin purée and whisk to incorporate. Do not over-whisk.
- Cook on a greased griddle or pan. Enjoy with maple syrup or melted chocolate.
